After you dig up your potatoes, its best to leave them lay out for the skins to harden. You cannot let the sun shine on the skin or they will turn green. Do not let them sit out for more than 10 days. Potatoes must be stored in a dark, cool and dry place. Our root cellar is very dark so we lay them out on boards. I see alot of potato dishes in our future!!
